Chuck Geiger, Townsquare Media[/caption]A simple summer salad from the garden, so good you don't need dressing. Easy to make and goes with any dish as a side.

I saw this fat plumb zucchini in the garden that needed picking and thought this could be the base for a great salad. I added tomatoes, onions, cilantro and pesto basil to it and it was great with pork chops on the grill. Here's the recipe:

1 zucchini (I used a cheese grater to make thin slices), 2 medium tomatoes cut into small pieces. 1 medium size white onion again cut into small pieces. Mix all together in large salad serving bowl. I added a squeeze of cilantro paste from a tube and mixed it into the salad. Next some sprigs of cilantro and pesto basil from the garden. Mixed it all up, chill and serve. it serves 4.
