One of Wyoming's favorite food trucks is hitting the road this summer, expanding their operation across the west. On The Hook Fish And Chips began with one truck in Laramie. Three years later, they're building their fourth truck and heading to Colorado, Nebraska and Utah.

It helps to know people. The owner comes from a family of commercial fishermen in Alaska, who ship the latest catch directly to him every week. Their fresh fish caught on quickly and On The Hook became a popular fixture at events all over Wyoming.

When they discovered that Utah was the top importer of Alaskan cod, they purchased and repurposed a truck for the Beehive State. Another truck will camp out in northern Colorado. The remaining two trucks in the fleet will split time between Casper, Cheyenne, Laramie and Nebraska.

To power the expansion, On The Hook is recruiting University of Wyoming students for summer jobs. Their booth was among the most popular at the recent UW job fair.
