You've got the dye ready to go.  You hard boiled every egg in the house, all to make those Easter Eggs.  But what to do with all of those eggs once Easter is over?

There's only so much egg salad you can make before you're nauseated at the thought of cracking open another hard boiled egg.  Deviled eggs are great, for awhile, but soon you're wanting to figure out other ways of using those leftover hard boiled eggs.

You can use them in lots of salads, potato salad, tuna salad, macaroni salad, you can chop them up on a lettuce salad.  In a fevered search, I took to the internet to see what other possible ways you can use those leftover hard boiled eggs, and I found a few recipes that were eye openers for me, including shortcake....SHORTCAKE???

I found this article in the Aiken Standard on leftover eggs, and much to my surprise, I found a recipe for "Jim Beard's Shortcake" that calls for 2 hard-boiled egg yokes.  They also had a recipe for "English Muffin Egg Pizzas" that I thought was rather interesting.  You can check out both of these recipes here!

I also found some unusual recipes from chow.com that have some classic recipes, along with some other interesting recipes including making Thousand Island Dressing out of some of those leftover eggs.  They even have a recipe for the classic egg salad sandwich, that has a bit of a twist.
