
Botanic Gardens Official Says Pumpkins Healthy Food
Cheyenne Botanic Gardens Assistant Director Claus Johnson says you may want to consider eating the contents of your pumpkin after carving a Jack O' Lantern this year. Johnson says pumpkins are healthy in several respects, including the fact that they are high in fiber and a good source of beta carotene, which the body converts to vitamin A. Johnson also says a cup of pumpkin only contains about 50 calories and says it is similar in nutritional value to squash and other orange-colored vegetables. Johnson says while most people associate eating pumpkin with pumpkin pie, there are a number of other ways to consume it, including pumpkin bread and pumpkin soup, to name only a couple.
