When you think of ethnic cuisine, a truck stop in Burns, Wyoming, isn't the first place that comes to mind. However, if you're willing to make the trip, this tiny hole-in-the-wall is one of the best Indian restaurants you'll ever find. Seriously.

Located in the Antelope Truck Stop off of Interstate 80, this diamond in the rough is tucked behind the gas station, convenience store and Antelope Bar.

When you first walk in, the place looks like a greasy spoon diner straight out of '70s. In fact, you'll still see Christmas garland on the wall.

The restaurant is run by an Indian family. If you have any questions about the menu, you'll have a difficult time deciphering their thick accents.

On top of the dated decor, their service isn't much to write home about. You'll need to seat yourself, grab your own silverware, fill your own drinks and order at the counter.

But the food...oh, the food...it's to die for. I've had Indian food in several cities across the country and I can honestly say this place is the best. Fort Collins has a few Indian restaurants and none of them even compare.

Start with the Samaosa plate and thank me later. The fritters are smothered in Indian yogurt and spices and topped with chickpeas and peppers. The sauce is so sweet and tangy, I resisted the urge to lick the plate after devouring the delectable appetizer.

Curry and Masala are the house specialties and both are excellent. The Curry is spicy, but not overwhelming, and the Masala is savory and delicious.

Sadly, we were the only people in the restaurant last night. Which a shame, because you won't find better Indian food anywhere in Wyoming.

Next time you're travelling through Burns, take a pit stop at the Antelope Truck Stop and check out the amazing Indian joint in the back. You won't regret it.
