A new book on fats we eat is called "How Not to Die," and it seems like it is speaking straight to the meat and potato lovers of Wyoming.

If you eat meat that is lean, like bison that we serve up so well in Wyoming, there's both good and bad news.

The good news is that lean is not better than fatty meats when it comes to heart disease and stroke. This means we can stop trimming the fat, says nutritionist/author, Dr. Michael Greger.

For a long time people believed saturated fat was bad bad for us. Now that we're passed the low-fat, high carb craze, we know all fat can actually be part of a healthy diet. It's just that the key word is part of the diet. This part, checking results of studies can look a little scary. They followed for decades hundreds of thousands of meat eaters.

In short, the meat eaters did not live as long, in fact, noticeably shorter lived. One highly endorsed alternative is the Dietary Approaches to Stop Hypertension, a.k.a. DASH.

Maybe all this does is make us want to throw our hands in the air, "So then what?" Maybe the answer is that we are, every one, going to die someday, but who wouldn't want to see how not to?
